This is the perforated plate that, paired with the cross knife, cuts and extrudes the meat coming out of the mincer: the 4.5 mm hole produces a fine grind, suited to mixes, sausages and preparations that need a fine texture. Replace it when the holes are worn/rounded, the cut is no longer clean (meat gets crushed rather than sheared) or the machine struggles to extrude.
