The size 32 meat grinder plate in stainless steel is the replacement part to fit when the original plate is worn, rusted or producing an uneven grind. It is the perforated disc that works against the cross blade: the meat, pushed by the auger, is cut and extruded through the holes, determining the final grind texture.

Unlike round-hole plates, the square-hole version is used to get a different texture from the classic mince, typical of preparations such as tartare, diced fat (lardelli) and rind. Replace it when the holes appear enlarged or deformed, show metal burrs or rust, or when the meat comes out "mashed" rather than cleanly cut - a sign that the plate and blade are worn and should be replaced together for a clean cut.
