Stainless steel knife mod. 42 SLX Salvador: replacement cross-blade for the mincing assembly of meat grinders. It is the cutting element that, rotating against the perforated plate, cuts the meat pushed by the worm screw: together with the plate it forms the cutting pair that sets the fineness of the mince.

Made of stainless steel, it withstands the corrosion caused by meat juices and acids and by repeated washing/sanitising, keeping a clean and hygienic cutting edge over time. The mod. 42 size identifies the mincing assembly (Enterprise system) the knife fits: the central square hole seats on the drive shaft, while the four radial blades work against the plate.

Replace it when the edge is worn or wavy, when the mince comes out pasty/warm instead of clean, or when there is play and ovalisation of the square hole: a worn knife, or one not in contact with the plate, degrades the cut, heats the meat and overloads the motor. For an optimal cut the knife and plate should always be paired and kept in contact.
