Part 3633-5002 is the clock knob (graduated cutting-thickness adjustment knob) for Berkel model 800S slicers, wheel version. On Berkel slicers the "clock" mechanism transmits the movement of the graduated knob, through a gear, to the control that moves the plate/pusher, allowing precise setting of the slice thickness.

When the clock knob wears out, loosens, or its internal mechanism jams, thickness adjustment becomes imprecise or the knob spins freely without moving the plate any more: in this case the component must be replaced to restore correct thickness adjustment.
