The grinding wheel for Berkel slicers is a replacement abrasive wheel for the slicer's built-in sharpener: it is used to sharpen the blade edge, restoring its cutting performance when it becomes dull. The hard (coarse) grit provides a more aggressive sharpening action, ideal when the edge is particularly worn.

When to replace it: the wheel should be replaced when it looks worn, chipped, glazed or out of balance, or when the blade no longer regains a sharp edge after the normal sharpening cycle. On many sharpener assemblies the coarse-grit wheel works in tandem with a fine-grit one: the first roughs out the edge, the second finishes it. We recommend replacing the wheels as a set and keeping them free of residue for uniform sharpening.
