These are the two opposed cutter blades that rotate in the bowl to chop and mince food; the smooth-edge version is suited to doughs and fine mincing. They work under heavy load and are wear parts: when they lose their edge, the cutter "mashes" instead of cutting. They are replaced as a pair.
