The sharpener is the device mounted on the slicer body that allows the blade to be sharpened without removing it from the machine. It consists of two grinding wheels: a coarse-grit one (sharpening wheel), which restores the cutting edge, and a fine-grit one (deburring wheel), which removes the residual burr left by the first pass. By flipping the sharpener 180° and positioning it between the two wheels in contact with the blade edge, the sharpening operation takes only a few seconds per wheel. This is the part to replace when the original grinding wheels are worn down, the abrasive grit has become smooth, or the sharpener shows mechanical play that no longer guarantees even sharpening of the blade.
