Left-hand knob with a 14 mm diameter pin for ARSA slicers, a historic Italian slicer brand (now part of Minerva Omega Group). It is the graduated knob that controls slice-thickness adjustment on the left side of the machine, via the numbered scale printed on the bezel.
It should be replaced when it is broken, when the coupling on the pin is worn, or when the knob turns freely without correctly adjusting the slice thickness any more.
