It is the wheel intended for finishing the edge: it works the blade after the coarse-grit wheel, removing the scoring left by the more aggressive abrasive and giving the knife a smooth, sharp cut ready to slice cured meats and other meats without shredding the product.

It is advisable to replace the fine-grit wheel together with the coarse-grit one to maintain uniform sharpening. Always check that diameter, thickness and hole match (42x8x8) before installation.
